Rice with green peas
Ingredients for 4 servings:
800 gr green peas
300 gr rice
50 gr lean bacon or raw ham
40 gr parmesan
1 lt broth
Half onion
Extra virgin olive oil
Rice with green peas
Shell the peas and set aside. Wash the pods, boil in salted water and whisk them; you must obtain a soft and fluid mixture.
Take a pan and heat 2 tbsp of oil, make golden the bacon and the onion well chopped, after 5 minutes add the rice, mix well and wet with the hot pods shake, mix well.
After 5 minutes add the peas, mix and cook the rice pouring a ladle of broth at a time.
In the end you must obtain a quite soft mixture, that is “all’onda”.
Season with salt and pepper, add chopped parsley and serve with parmesan apart.

I suggest to match this dish with Soave Classico, Orvieto Classico Superiore o Greco di Tufo.
