Chocolate and coffee panna cotta
Ingredients for 8 servings:
200 ml milk
200 ml fresh cream
200 gr dark chocolate
3 tbsp sugar
1 cup of espresso sweetened
2 sheets of gelatin or agar agar

Boil milk and cream with the sugar. Pour sweetened coffee and the gelatin, previously soaked in cold water and wrung. Stir well and let it cool.

In the meantime, finely mince the dark chocolate and combine with warm milk, and let it melt with a whisk.

With this mixture fill 8 little rubber molds or the classic crème caramel molds lined with transparent film. Let thicken the desert in the refridgerator fo 3 hours.
Serve the panna cotta decorated as desired.

Chef's advice
If you want obtain a more dense and creamy panna cotta just replace the milk with the same amount of cream.

Instead of gelatin you can use agar agar that helps to make the panna cotta compact and creamy at the same time.
