Tomato sauce
Ingredients for 4 servings:
400 gr ripe tomatoes
2 tbsp of extra virgin olive oil
1 onion, finely chopped
1 tbsp of basil, minced
1 tsp of parsley, minced
1 stick of celery, sliced
1 carrot, sliced

Tomato sauce
Skin and remove seeds from the tomatoes; chop them and put into a pan together with the vegetables and oil, and salt.
Cook at moderate heat for 30 minutes. Pass through a vegetable mill, pour inside the same pan and boil until the sauce will get the right consistence.

Instead of ripe tomatoes you can use tin tomatoes.
