Neapolitan pizza
Ingredients for 4 servings:
500 gr of pizza/bread dough
300 gr of fresh tomatoes pulp
300 gr of mozzarella
1 can or 1 jar of anchovies in oil
A lot of oregano
Extra virgin olive oil (good quality)

Add some oil to the dough paste and work it vigorously on a work surface.

Grease a large baking tin with a little oil.

Stretch the dough directly on the baking tin, continuing to pull it towards the edges of the baking tin and making sure that the edges of the dough are quite thick.

Spread on the dough, leaving a margin of a few centimeters, the tomatoes pulp chopped into small pieces, half mozzarella slices, anchovies, plenty of oregano and drizzle with plenty of olive oil.
Bake in the oven (or “infornate” as Italian use to say) at 220 °C for 20-25 minutes.

A few minutes before bring out the pizza spread over the remaining mozzarella slices.

Chef's advice
The "classic" Neapolitan pizza requires only tomato sauce, oregano, basil and garlic.
The recommended wine is Lugana (white) or a classic beer.
