Tuscan tomatoe meat sauce
Ingredients for 4 servings:
200 gr pulp of lean beef cutted into thin slices
300 gr ripe tomatoes
15 gr dried mushrooms
1 onion finely chopped
1 stick of celery finely chopped
1 carrot finely chopped
4 tbsp of oil
Tuscan tomatoe meat sauce
In a pan (possibly earthenware), brown the vegetables with oil at middle heat for 30 minutes. Add the slices of beef and the mushrooms previously soaked in warm water and miniced; brown for several minutes.
Remove the meat and chop it. Skin and chop the tomatoes, add to the meat and put in the pan. Salt, pepper, cover the pan and let it boil for 30-40 minutes.

Preparation time: 30 minutes
Cooking time: 70-80 minutes
Difficulty: easy

Chef's advice
This sauce can be used to season pastasciutta, ravioli, gnocchi, etc.
I suggest to serve with Brunello di Montalcino, Dolcetto di Alba, Barbacarlo dell’Oltrepò Pavese..
