Zucchini with laurel
Ingredients for 4 servings:
1 kg zucchini
2 bay leaves
20 gr butter
Half glass of dry white wine
Zucchini with laurel
Wash zucchini and slice them into quite thin rounds.
“Soffriggere” (sauté/light fry) zucchini for 10 minutes in a pan with a knob of butter, then season with salt and pepper, sprinkle with the wine and add the bay leaves.
Cover with a lid and finish cooking on medium heat.
Remove the bay leaves and reduce further the cooking liquid on the heat.
Serve immediately.

Chef’s adives
To further spice up the zucchini, halfway through cooking you can add a tablespoon of dried marjoram.
