Potato croquettes with ham and fontina
Ingredients for 4 servings:
800 gr floury potatoes
100 gr fontina
50 grated Parmesan cheese
60 gr ham (1 slice)
3 eggs
Potato croquettes with ham and fontina
Boil potatoes for 40-45 minutes. Peel them and pass through a masher putting them into a terrine.
Add one whole egg and 1 yolk, grated Parmesan, salt and pepper, stir well.
By taking a little, form many croquettes, putting in each of them a stick of fontina and one of ham.
Beat the remaining eggs with a pinch of salt into a dish, shortly roll the croquettes inside, pass them into the breadcrumbs, fry into abundant hot oil.
When golden, remove from the oil using a perforated scoop, dry on blotting paper, place on a serving plate. Garnish with basil leaves. Serve hot.
