Golden rice balls with artichokes
Ingredients for 4 servings:
200 gr of rice
4 artichokes
A bunch of parsley
Bread crumbs
A glass of dry white wine
30 g of parmesan
Extra virgin olive oil
Soy sauce
Golden rice balls with artichokes
Boil the rice in salted water, then drain and place in a bowl.

While the rice is cooking, clean well the artichokes by depriving them of the stems, the tips, the tough outer leaves and internal beard, then slice them thin.

Clean and chop the onion and brown it in a pan with the oil.

When it is dried add the artichokes and pour the wine.

When cooked, add and mix the grated Parmesan cheese and the chopped parsley, add salt and pepper and then add to the rice.

As soon as the mixture has cooled, form small balls and pass them in the breadcrumbs; brown in the pan using a little oil.

The rice balls can be served hot or cold, accompanied with some soy sauce.

Chef's advice
To cook vegetables and browning the rice balls you can also use a Wok.
The recommended wine is San Colombano (white).
